One of my favorite ways to prepare and enjoy chicken!
I buy a large package of boneless chicken thighs and place them in an appropriate sized baking dish.
Next I melt 2 Tablespoon of butter or coconut oil and I add 2 tablespoons of mustard (I use all different kinds of mustard depending on the day!)
Add seasonings like salt and pepper, sage, thyme, marjoram to the mixture and spread over the thighs.
Cover and bake for 45 minutes until the temp reaches 165F.
It's super simple and delicious!
