Preheat your oven to 200F - you are just drying out the apples not cooking them
Slice the apples thin, the thinner the better, use a mandolin if you have one or use a nice sharp knife.
Lay the apples out on your parchment lined baking sheet, do not overlap them.
Sprinkle the apples with a touch of cinnamon and bake for 1 hour then flip and bake for another hour until they are nice and dry.
